Chocolate Walnut Peanut Butter Cake



So I made Crystal her cake! My first attempt at making a chocolate cake was a total disaster, so I went ahead and got the help of Betty Crocker. I did not want to kill it for her, so I decided to practice on cake making from scratch later on when I have time. I decided to bake a Chocolate Walnut brownie mix, with my own little mix. Ha.


I greased two 8" pans and poured in the batter to both pans. Baked for about 30 mins.


For the peanut butter layer:


  • 3/4 Cup of creamy peanut butter

  • 1/4 cup unsalted butter

  • 1/4 teaspoon of vanilla extract

  • 3/4 cup of powdered sugar

Beat peanut butter, butter, and vanilla in medium mixer bowl until its smooth and combined. Gradually add in powdered sugar, beat until its fluffy. Spread the mixture on top of one cake (when cake is cooled for about 30 mins, or else peanut butter layer WILL melt).


The decorations where random. I threw in things that came to mind. Including these chocolate cookie kisses that where laying around.



I got a chance to get a slice of the cake. Let me tell you ..... it was BOMB. :D

Prom Night

I look across the dance floor, with the lights dim, at the others dancing in company's arms. I hold a drink in my hand. Wishing it had something else. Something else to make my mind go elsewhere.

What am I doing here?

Ticket ... dress ... shoes .... makeup ... and hair. All paid. I had time to look in the mirror before I left. Was that me? I looked not like any other. Tears almost rolled down my eyes. What is the use in looking beautiful tonight? Why am I going?

I turn to my friends. All laughing and enjoying the time, with not a care in the world.

I turn back and look up to what has been making my heart fly away. I saw him since he arrived. Like a handsome young man. Looking more irresistible than ever. He sits on the other side. Making the other kids and the dance floor a whole ocean between us. "Here I am.." I say in a breath, making it impossible for even someone a foot away to hear. But like a signal, he turns his head.

We locked each other's gaze. A stinging sensation rings through out my whole body. I was drowning. It seemed like if the only way to breath again, was for him to come and save me.

Has it been four years? Four years of love from afar? Not knowing anything but his name.

He gets up, not moving his eyes away. What is he doing?

He walks in straight line, towards my direction.

What is he doing?

I don't move. I don't do anything but gaze at the beautiful creature coming towards me.

He moves through the crowd, which has slowed down. A nice slow song has played. But he moves. He moves and doesn't make an effort to stop, in a slow moving pace. Left to right, until he finally has a perfect view of me.

He stops.

He is not but five feet away.

I'm frozen.

He gets closer. Four feet, three, two, one ...

My breathing stops.

He looks right into my eyes. He takes his hands and cups my face in the most tender way.

"Its about time", is all he says.

He kisses me.

Spring Pasta w/ Cheese

Something new I tried today!

Prep: 10 min / Cook: 15 min / Total: 25 min


  • 1 box of Kraft Macaroni & Cheese (7 1/4 oz)
  • 2 tsp Light Zesty Italian Reduced Fat Dressing
  • 1 cup of broccoli
  • 1 cup strips of pepper (green or red)
  • 1 cup of green beans
  • 2 tsp Parmesan cheese
  1. Prepare Macaroni & Cheese as directed in packet.
  2. Pour the dressing in a skillet on low medium heat. Add broccoli, pepper, and green beans. Cook and stir for 5 mins.
  3. Add vegetable mix to macoroni, and sprinkle parmesan cheese.

Yeild 4 servings.

Icecream toppings!


(3/4 cup of pineapple ice cream
1 tbs of raisins
1 chewy chocolate chip bar
1 medium sliced banana)


Something I was eating for dessert for a couple of days. I tend to pile up icecream with anything that comes in mind. And I suggest that to everyone... there are endless possibilities!

Krystal's birthday is coming up. And that gives me an excuse to bake something! I promised to make her a cake, and I'll keep it. I just need to hunt down some recipes.

Classic New York Style Sour Cream Cheescake


I found a great video tutorial over at KraftFoods.com on the classic New York Style Sour Cream Cheescake! The video makes everything look easy.






I'm going to be sure to give a cheescake a third try. All I need is time, which is something I've been lacking these past couple of months. Damn you, school! DAMN YOU! Just 47 more days until graduation!
